Parmesan Roast Turkey

Ingredients
8 tablespoons Unsalted butter (room temperature)
2 teaspoons Fresh minced rosemary
2 teaspoons Fresh minced thyme
2 cloves Garlic (minced)
Zest from 1 lemon
1 1/2 cups Freshly grated Parmesan cheese (divided)
Salt & pepper
1 10 to 12 pound Turkey (spatchcocked)
2 tablespoons Olive oil

Step by Step Instructions
  1. Preheat oven to 375 and fit a wire rack into a baking sheet.
  2. Combine the butter, fresh herbs, minced garlic, zest, salt, pepper, and 1/2 cup of Parmesan cheese until a smooth mixture is formed.
  3. Pat the turkey dry and season it with salt and pepper. Place it skin side up on the prepared wire rack in the baking sheet.
  4. Loosen the skin on the turkey breast and legs with your fingers, then rub the Parmesan mixture evenly on the meat under the skin of those areas
  5. Rub the olive oil over all of the (outer) skin of the turkey, then evenly sprinkle the remaining grated Parmesan all over the outside.
  6. Roast the turkey for 1 and a half to 2 hours, then let rest for 30 minutes before carving.
